They did leave an opening for another one at the end of Nemesis. If it was going to be the absolute last, they would not have shown them repairing the enterprise e. They would have either destroyed it or decommisioned the ship along with having the characters retire, as with STVI. Plus, there are tons of stories they could do since Nero went back in time and altered history. They could probably redo the whole TNG TV series. I think there should be at least one more TNG movie.
